Day 191: Winter Squash, it’s not cross training. December 4, 2007

Tuesday. 7.3 miles in 1:20:09. Nice and slow today. The temps were great (32°) and no wind. Awesome. But there is still ice and snow along the shoulder and edge of the road where I run so I took it slow, and really enjoyed the run.

I was recently sitting in a local coffee shop reading the newest issue of Runner’s World and really appreciated the article on “winter squash” as the perfect recovery meal. Yishane Lee lays out the various kinds and benefits squash and offers simple preparation tips. My favorite is the spaghetti squash with a little butter, salt and pepper.
